Some days you're feeling kinda sickly (sorry about the paucity of posts this week!). And some days your mom isn't around to make her delicious clear chicken soup that cures all ailments (no really - there is some magic in there!). And some days you just want to tuck into something plain and comforting. For those days there is dahi bhat (quite literally, "yogurt rice"). Soothing, full of good probiotics, and just comfort food at its best.

P.S. It doesn't seem like it, but this dish also works well for a picnic food - just put it in a cooler, and don't forget to pack some spoons to eat it!
Dahi Bhat
Ingredients
1 cup cooked rice
1 cup plain yogurt
1/4 - 1/2 tsp salt
1/4 tsp sugar
1/2 tbsp vegetable oil
1/4 tsp asafoetida
1/4 tsp red chili powder
1/4 tsp mustard seeds
Directions
In a bowl, mix together the rice, yogurt (get the good stuff with the live cultures - it's good for you!), salt, and sugar. Set aside.
In a little pan (a butter warmer type deep small saucepan would be ideal), heat up 1/2 tbsp oil until it is almost smoking. Add in the asafoetida, chili powder, and mustard seeds, and let splutter for about 20 seconds.
Pour these tempered spices over the rice and yogurt mixture.
Stir to combine fully.
And done!
