Mint Pea Soup

It's the tail end of summer, and even though I'm looking forward to crunchy apples and cute jackets, I can't quite bear to let go of balmy days and refreshing dinners just yet.

So here's a soup that brings together the flavors of summer but with just enough heat and heartiness to hint at a coming fall.

Pesto Pizza!

Y'know those days when you're craving something crunchy yet gooey, cheesy yet healthy, filling yet light? Well, for those contradiction filled evenings, here's a yummy summery pesto pizza for you.

Pesto Pizza

1 ball frozen pizza dough (some day I'll get more comfortable working with dough and make my own, but for now frozen works just perfectly)
1 cup summer pesto (see, leaving out the parmesan in the pesto makes you feel a lot better about adding some cheese in here)
1 cup grape tomatoes
1 cup dried porcini mushrooms
1/2 cup shredded mozzarella cheese
1 egg
Salt and pepper to taste

Easy Corn Curry

I know the most popular way to eat corn is on the cob either boiled or grilled and with butter (if you're in the US) or, if you're in India, grilled over an open flame and sprinkled with salt, chili powder, and lemon juice (a perfect salty spicy summer bite - and healthy to boot!). Mm mm. But when corn is in season (and boy, is it in season now!), and you think you've eaten as much grilled or boiled corn as you can handle at your umpteenth barbeque, try this one on for style:


It's particularly perfect for those rainy summer evenings when you don't really want to fire up the grill but you do want that summery sweetness of corn.
